Production area: Etna, northern slope of the Schigliatore district (Castiglione di Sicilia)
Altitude: 750/850 m above sea level
Soil: volcanic, rich in potassium and iron
Training system: sapling
Average age of the vineyards: 5 years
Harvest: second ten days of September
Vinification: cryomaceration for approximately 24 hours, pressing
soft pressing of the grapes at 5°C. Fermentation with indigenous yeasts in
steel silos for approximately 10 days at temperatures of 18/20°C
Maturation and Refinement: stainless steel silos for at least 2 months,
bottle for at least 30 days
Sensory characteristics:
Visual: straw yellow with greenish reflections, clear, brilliant
Olfactory: typical nose of the territory of great elegance with notes
citrus, minerals and flowers typical of the Mediterranean scrub
Taste and olfactory sensations: very fresh and savoury on the palate, soft
and balanced and with good persistence
Alcohol content: 13% vol
Serving temperature: 8/10 °C
Recommended glass: medium-sized tulip
Pairings: we recommend spaghetti with sea urchins, fish
grilled swordfish, oysters and seafood and all the specialties
local gastronomic specialties with little structure and typical fish dishes
of the Mediterranean tradition.
