Vinification: maceration with the marc and fermentation with indigenous yeasts in rotating horizontal steel silos for approximately 10/2 days at temperatures of 22/24 °C
Maturation and Refinement : stainless steel silos for 12 months, bottle for at least 3 months
Sensory characteristics:
Visual: ruby red, transparent and bright
Olfactory: complex and elegant nose typical of the territory characterized by notes of cherries and berries, minerals, spices, black pepper and citrus notes
Taste olfactory, a dry, warm balanced, characterized by a great freshness well balanced by the sapidity and a fine and velvety tannin.
Alcohol content: 13.5 vol
Serving temperature: 18/20 C
Recommended glass: Burgundy, large and rounded
Pairings: We recommend a pistachio lasagna timbale, structured meat main courses, medium/highly matured cheeses and all the typical vegetable and meat specialties of the Mediterranean tradition.
